Save Mom Time by Making and Storing Your Own Pancake and Waffle Mix

This recipe is made easiest if you are using PantryChic SmartCanisters to store all-purpose flour, granulated sugar, baking powder, and salt.

If you are not already storing all of these ingredients in their own SmartCanister, you can always use the PantryChic's scale function to manually add an ingredient.

Make the Mix

Place a very large mixing bowl on the PantryChic scale. The bowl of an electric mixer works well for this as it usually has a very large capacity, but we will not need to use the electric mixer to mix.

Dispense 10 cups of flour, 3/4 cup of sugar, 1/2 cup of baking powder, and 2 tablespoons of salt into the bowl. If you are concerned you do not have a bowl large enough that will fit on the PantryChic, simply dispense in 2 batches across 2 mixing bowls, each receiving 5 cups of flour, 75g sugar, 1/4 cup baking powder, and 1 tablespoon of salt.

Stir all of the dry ingredients together for at least 2 minutes to ensure everything is properly dispersed. Transfer to a PantryChic SmartCanister. Set the SmarCanister to “other” for proper measurement.

Make the Pancakes

To make a perfect batch of pancakes, dispense 200g of the pancake mix to a mixing bowl and whisk in 1 1/4 cups milk, as well as 1 large egg. This will make enough batter to make 6–8 medium-sized pancakes to feed 3–4 people.

Once the batter is mixed, grease a skillet or griddle with a thin layer of oil and place over medium-high heat. Scoop 1/4 cup of the pancake batter and pour into the hot pan.

Once bubbles begin to form in the middle of the pancake, reduce the stoves heat to medium to regulate the temperature and ensure the pan does not get too hot, then flip the pancake. Let cook 1–2 additional minutes, just until the pancake is browned on the bottom and easily releases from the pan.

Raise heat slightly for the next pancake and continue on. Each batch of pancake batter should make 6–8 pancakes.

Did Somebody Say Waffles?

This batter can also be used to make waffles! For the BEST waffles, besides adding the milk and egg you’d add for pancakes, you should also add 1 tablespoon of melted butter and 1/4 teaspoon of vanilla extract. This gives you better browning in the waffle iron and a better flavor in the final result.

Waffles are a little trickier than pancakes and may take some trial and error, but once you’ve figured out the amount of batter and temperature you need for your specific waffle iron you will be off to the races!

Recipe: Pancake and Waffle Mix

Active Prep Time: 10 mins ∙ Makes: 7 batches (3–4 servings each)

3/4 cup (150g) granulated sugar

1/2 cup (85g) baking powder

2 tablespoons (36g) salt

Each Batch of Pancakes

1 1/2 cups (200g) pancake and waffle mix

1 1/4 cups (305g) milk

1 large egg

Each Batch of Waffles

1 1/2 cups (200g) pancake and waffle mix

1 1/4 cups (305g) milk

1 large egg

1 tablespoon butter, melted

1/4 teaspoon (1.25g) vanilla extract

DIRECTIONS

  2. Grease a skillet or griddle with a thin layer of oil and place over medium-high heat. Scoop 1/4 cup of the pancake batter and pour into the hot pan.
  3. Once bubbles begin to form in the middle of the pancake, reduce the stoves heat to medium to regulate the temperature and ensure the pan does not get too hot, then flip the pancake. TO MAKE WAFFLES

  1. Place a mixing bowl on the PantryChic scale. Dispense 200g of the pancake and waffle mix (this is equal to 1 1/2 cups measured by hand). Whisk in 1 1/4 cups of milk, 1 large egg, 1 tablespoon melted butter, and 1/4 teaspoon vanilla extract, until a smooth batter has formed.
  2. Spray a waffle iron with vegetable oil spray to grease, then preheat. Add about 1/4 cup of the batter, close, and heat until golden brown. Note that there will be some trial and error to figure out the right amount of batter to add for your size of waffle iron, as well as the heat setting and cook time for each waffle. It’s a good rule of thumb to start with less batter than you’d think and a medium heat setting, either on your stove or an electric waffle iron. You can always adjust things from there.
